新加坡的华人有一道菜叫作“鱼生” , 鱼生广东人吃得多了 , 在九江 , 就能尝到九江鼎鼎有名的“捞鱼生” 。食家说 , 自有九江人开始 , 就有这种“捞鱼生”的吃法了 。九江人吃鱼生时 , 需要筷子捞匀配料 , 有“捞起捞起”的好意头 , 渐渐成了当地的一种习俗 。在九江白米巷的这家荣华酒店还保留着这个吃法 。据酒店老板陈满华介绍 , “捞鱼生”的特点主要是配料 , 有炸芋头丝、红白萝卜丝、炸粉丝、姜丝、蒜丝、辣椒丝、葱丝、榄角碎、荞头丝、麻花粒、白芝麻、花生等 , 总共有十几道配料 。光是准备这么多种配料 , 师傅就要花上半天时间 , 还要将选好的鱼进行专门的放养 。客人一到就立即杀鱼放血 , 以保持鱼肉的新鲜味美 。难怪要预约才能吃到了 。片片薄薄晶莹剔透的鲩鱼肉上撒上了清香的柠檬叶丝 , 鲜美极了 。食家说鱼生要即捞即吃 , 吃完再继续捞 。原来“捞鱼生”还分两种不同季节的捞法 。先看看冬天的吃法吧 。冬天要先捞鱼再捞配料 , 好让鱼吸收配料的香味 。先将鱼生放入大盘中 , 加生油一起捞 , 生油起杀菌的作用 , 放胡椒、盐捞匀 , 接着放浸了白醋的萝卜、糖 , 再加生油 , 把各种配料都放适量进去 , 捞均匀 , 最后撒芋丝、花生、麻花粒这些脆口的配料 。夏天则程序相反 , 由于天气炎热 , 要先捞配料再捞鱼 , 这样鱼肉就能保持鲜美 。一筷子夹下去什么配料都有了 , 入口爽脆 , 咬到鱼生则鲜嫩清甜 。

The Spring Festival is the most important festival for the Chinese people and is when all family members get together, just like Christmas in the West. All people living away from home go back, becoming the busiest time for transportation systems of about half a month from the Spring Festival. Airports, railway stations and long-distance bus stations are crowded with home returnees.
The Spring Festival falls on the 1st day of the 1st lunar month, often one month later than the Gregorian calendar. It originated in the Shang Dynasty (c. 1600 BC-c. 1100 BC) from the people's sacrifice to gods and ancestors at the end of an old year and the beginning of a new one.
Strictly speaking, the Spring Festival starts every year in the early days of the 12th lunar month and will last till the mid 1st lunar month of the next year. Of them, the most important days are Spring Festival Eve and the first three days. The Chinese government now stipulates people have seven days off for the Chinese Lunar New Year.
